  • • 1 small onion, diced
  • • 2 cloves garlic, minced
  • • 1 can (14 oz) crushed or diced tomatoes
  • • 1 teaspoon chili powder
  • • 1 teaspoon smoked paprika
  • • 1 teaspoon cumin (optional)
  • • Salt and pepper to taste

Instructions

  1. 1. Heat oil in a skillet over medium heat
  2. 2. Add the onion and cook until softened
  3. 3. Add the garlic and cook for 1 minute
  4. 4. Stir in tomatoes, chili powder, smoked paprika and cumin if using
  5. 5. Simmer for 10 to 15 minutes until slightly thickened
  6. 6. Season with salt and pepper

Roasted Ranchero Sauce (Deeper Flavor)

Ingredients

  • • 4 Roma tomatoes, halved
  • • 1 small onion, quartered
  • • 2 cloves garlic
  • • 1 jalapeno or serrano pepper
  • • 1 tablespoon oil
  • • 1 teaspoon chili powder
  • • 1 teaspoon oregano
  • • Salt and pepper

Instructions

  1. 1. Toss tomatoes, onion, garlic and chile with oil
  2. 2. Roast at 425 degrees for about 20 minutes until lightly charred
  3. 3. Transfer everything to a blender
  4. 4. Add chili powder, oregano, salt and pepper
  5. 5. Blend until smooth
  6. 6. Pour into a saucepan and simmer for 10 minutes

  • • 1 tablespoon oil
  • • 1 small onion, diced
  • • 2 cloves garlic, minced
  • • 1 can (14 oz) fire roasted tomatoes
  • • 1 to 2 chipotle peppers in adobo
  • • 1 tablespoon adobo sauce
